Traditional French Madeleines — With a Twist!
As it happened, I was again asked to provide a traditional snack that would be ideal for adults and kids.
Madeleines are usually made with flour, sugar, eggs and butter. But, traditional didn't mean I couldn't make delicious madeleines gluten-free.
As it happened, nobody has spotted a difference.
I had to please everyone, so I followed orders and added sugar, but you can replace caster sugar with your favourite plant-based sugar or even erythritol to make these a low-carb option #keto #lowcarbs.
I also added delicious matcha green tea for the adults with a hint of lemon.
Recipe (makes 36 madeleines)
Preparation time: 5 minutes
Cooking time: 25 minutes
Batter
145 g gluten-free plain flour
100 g caster sugar
100 g butter (very gently melted)
(keep 20 grams to butter the trays of madeleine moulds)
3 eggs
1 yolk
2 tablespoons of poppy seeds
1 levelled teaspoon of matcha green tea
half a lemon juice
pinch of salt
Method:
Melt butter with matcha green tea without allowing it to reach boiling point. Keep one tablespoon and a half to butter the tray of madeleine moulds
Mix the sugar, salt and lemon juice with a wooden spoon, then incorporate the eggs and extra yolk
Add the sifted flour and mix until the batter appears smooth and finally the melted butter
Leave to rest for twenty minute or up to two hours
Pre-heat fan-assisted oven to 180˚c
Spoon the mixture into the moulds with a spoon. Do not fill more than tow-third full
Bake in the middle of the oven until cooked (for about 25 minutes)
Turn out the madeleines and leave to cool on a wire tray
Keep in an air-tight container for up to 4 day
