Keto-friendly Halloween Cookies

Fall is now upon us, a season lasting the whole year, with absent or shorter summers, year after year.

Cinnamon, other warming spices, and root vegetables will soon be in season. These are great ingredients to make Halloween treats.

I dare you to give this to the "trick-or-treaters" instead of health-wrecking candies. These are delicious and easy to make. They will be loved by children and grown-ups!

Recipe

Serves (24 cookies)

100 g desiccated coconut (sugar-free)
1 large sweet potato (boiled, cooked)
3 handfuls ground linseeds
1 handful mixed nuts
3 tbsp ground almonds
3 tbsp pumpkin seeds
2 tbsp sesame seeds
1 egg
1 tbsp xylitol (or erythritol)
1/2 tsp cinnamon (ground)
1/2 tsp vanilla powder

Method:

1. preheat oven to 180˚c.

2. mix all ingredients together in a large kitchen bowl. 

3. Leave to rest for 20 minutes.

4. with a tablespoon or an ice-cream scooper, shape 24 balls

5. with slightly wet hands, shape the balls into cookies.

6. bake for 20 minutes. 

7. once cooked (still a little soft in the middle), place on a cooling rack and leave to cool completely. Store in an air-tight container. Keep for 3-4 days.
